Utilization of Collagen & Gelatin Extracted from Skate (Raja Kenojei) Skin
Collagen and gelatine are a fibrous protein with a broad range of industrial applications employed world-wide. Gelatin is obtained by the partial hydrolysis of collagen contained in the skin, connective tissue and bones generated as waste during animal slaughtering and processing. It improves the functional properties of food products and may also be used as antioxidative and antimicrobial peptide. Gelatin is widely used in many industrial fields, such as food, pharmacy and photography, and cosmetic materials. Other sources of gelatine and collagen are becoming increasingly relevant, such as fish bones and skins. This book presents current research in the study of the utilisation of collagen and gelatine extracted from skate skin.
