The present work covers in detail the results of measurements of apparent molar volumes, viscosities and apparent molar adiabatic isothermal compressibility of various -amino acids and peptide in water and in aqueous sodium nitrate (NaNO3), potassium nitrate (KNO3) and magnesium nitrate hexahydrate [Mg(NO3)2.6H2O] solutions at different temperatures as follows. These data have been used to arrive at the various parameters like partial molar volumes, partial molar adiabatic compressibility capacities and viscosity B-coefficients and their corresponding transfer functions, side chain contributions, interaction coefficients, activation parameters and hydration numbers. These parameters have been used to rationalize the nature of interactions amongst various -amino acids/ diglycine (solutes) and water (solvent) in the presence of NaNO3, KNO3 and Mg(NO3)2.6H2O (cosolute).
